If you know us, you know our first instinct was to launch with a kicky post about cocktails – but alas a girl has to eat, too.  We think this beautiful summer salad is the perfect way to kick off our blog and the Summer Solstice.

We crave color year-round, but it is particularly inviting in the summer, in the form of a sweet and savory watermelon salad.  The picture alone is a whole meal.   

Watermelon Summer Salad with Rosé Wine Vinaigrette 

3 cups of seedless watermelon, cubed

1 medium cucumber, cubed or spiralized

½ cup of feta, crumbled

½ cup mint leaves, chopped and some whole leaves for garnish

¼ cup Rosé wine vinegar – or ¼ cup of Rosé wine and 2 tbsp of red wine vinegar

½ cup extra virgin olive oil

1 tbsp honey

Salt and pepper, to taste

 

Cut the watermelon into bite sized cubes. We spiralized the cucumber because it adds visual interest, and we are just fancy like that.  Combine the watermelon, cucumber, mint, and feta in a serving bowl.

We used the Hermit Glazed Porcelain Bowl in celadon.

In a measuring cup or pitcher – we used the  Small Roxy Pitcher – combine Rosé wine, olive oil, salt, pepper, and honey.  We used L’Abeille pure lavender honey (available in store) for its delicate sweetness. Whisk until combined.

Pour the dressing over the top of the salad and toss to combine. Garnish with some whole mint leaves.

And hey, since the bottle is already open nothing is stopping you from pouring yourself a Pink Stem Wineglass of Rosé!
